Rice starch also called rice flour. Rice starch is regarded as a major cereal starches with many functional properties. It is obtained from different rice cultivars. Generally, 3.5 ounces (100 grams) of uncooked rice contains approximately 80.4 grams of carbohydrates, of which nearly 63.6% is starch content.

Rice starch is classified by small grains which are in the range of nearly 2-8 µm, which are very small as compared to other cereals, roots, and tubers. Rice starch is one of the very fine tasteless and grained powder which is produced by dealing out and processing with raw rice. Rice starch is useful in offering smooth textures and feels and in addition, serves as one of the natural fat replacer.
