Cellulase (CAS 9012-54-8) refers to a class of enzymes that are produced by bacteria, fungi, and protozoans for hydrolysis of cellulose. The cellulose decomposition process is known as cellulolysis where the cellulose is breakdown into cellodextrins i.e., smaller polysaccharides. Cellulase is also produced by snails, earthworms, and termites. Cellulase is widely used for processing coffee and in food, paper & pulp, textile, pharmaceutical, and other industries. It is used as an ingredient in washing and cleaning agents, laundry detergents, alcoholic and non-alcoholic beverages, etc.
